Ingredients
1-pound 93% lean ground turkey
1/2 cup whole grain bread crumbs
1 cup packed fresh spinach*, finely chopped or frozen spinach (thawed)
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped sun-dried tomatoes
1/2 tsp garlic powder
1 tsp onion powder
2 egg whites, lightly beaten
2 tablespoons water
1/3 cup crumbled reduced-fat feta cheese
1/8 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Directions
Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
Rub the inside of a 9 by 5-inch loaf pan with olive oil.
In a large bowl, stir together the bread crumbs, spinach, parsley, sun-dried tomatoes, garlic and onion powders, egg whites, water, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.
Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 35-45 minutes.
Remove from the oven and let rest for 5 minutes. Enjoy.
Notes
Spinach keeps the meat moist. If using frozen, defrost and squeeze out excess liquid.
You can also swap ground turkey for ground chicken.
