Ingredients
1 pound 93% lean ground turkey*
1/2 cup whole grain bread crumbs
1/2 cup grated Parmesan cheese, reduced-fat
1/4 tsp pepper
1/4 tsp kosher salt
1 large egg
1 cup packed fresh spinach, finely chopped or frozen spinach*
1/2 tsp garlic powder
1 tsp onion powder
1/4 cup fresh parsley, finely chopped
1 teaspoon Italian seasoning
1/4 teaspoon red crushed chili pepper flakes, optional
Directions
Preheat oven to 400F, and line a baking sheet with parchment paper.
In a large bowl, add the turkey, bread crumbs, parmesan cheese, salt and pepper, parsley, Italian seasoning, chili pepper flakes, onion, and garlic.
Lightly beat the egg and stir it into the bowl.
Add spinach and mix together just enough to get everything evenly distributed.
Use a 1 ½-inch scoop to scoop the meatballs. Place them evenly spaced on a parchment-lined sheet pan.
Bake at 400 for 15-20 minutes. Serve in marinara sauce over zucchini noodles, cauliflower rice, or whole grain or lentil pasta.
To freeze, allow the meatballs to cool completely. Then, freeze in a large freezer bag.
Notes
Spinach keeps the meat moist. If using frozen, defrost and squeeze out excess liquid.
You can also swap ground turkey for ground chicken.
