Ingredients
1 lb lean ground turkey or chicken
2 tsps avocado oil or olive oil
1 large yellow onion, chopped
2 large garlic cloves, minced
1 yellow pepper, diced
1 red pepper, diced
1 orange pepper, diced
3 Tbsp chili powder
2 Tbsp ground cumin
1 tsp onion powder
1/2 tsp garlic powder
1 tsp oregano
1/2 tsp kosher salt
1/4 tsp black pepper
1 28 oz. can diced tomatoes, no salt added
1 28 oz. can crushed tomatoes, no salt added
1 15 oz. can black beans, low-sodium, drained and rinsed
1 15 oz. can kidney beans, low-sodium, drained and rinsed
Directions
Place oil in a large pot over medium-high heat. Add onions and cook for 2 minutes or until fragrant. Add garlic and peppers and sauté for 5-7 minutes, stirring frequently.
Add ground turkey and break up the meat, cook until no longer pink. Next, add chili powder, cumin, onion powder, garlic powder oregano, and salt. Stir for a minute.
Next, add tomatoes and beans. Bring to a boil. Then, reduce heat and simmer for 30 minutes. Taste and adjust seasoning and salt as needed.
Garnish with your favorite toppings: low-fat Mexican cheese or Greek yogurt, low-fat sour cream, sliced avocado, fresh cilantro, brown rice, or tortilla chips.
Notes
More spice: add 1/4 teaspoon of cayenne pepper or sliced jalapenos
Vegetarian or vegan: omit turkey and add extra beans or tofu crumbles
Slow cooker method: brown turkey and onions before adding to slow cooker. Add all ingredients and cook on high for 3-4 hours or low for 6-7 hours.
