Turkey Chili

Ingredients

  • 1 lb lean ground turkey or chicken

  • 2 tsps avocado oil or olive oil

  • 1 large yellow onion, chopped

  • 2 large garlic cloves, minced

  • 1 yellow pepper, diced

  • 1 red pepper, diced

  • 1 orange pepper, diced

  • 3 Tbsp chili powder

  • 2 Tbsp ground cumin

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp oregano

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 1 28 oz. can diced tomatoes, no salt added

  • 1 28 oz. can crushed tomatoes, no salt added

  • 1 15 oz. can black beans, low-sodium, drained and rinsed

  • 1 15 oz. can kidney beans, low-sodium, drained and rinsed


Directions

  1. Place oil in a large pot over medium-high heat. Add onions and cook for 2 minutes or until fragrant. Add garlic and peppers and sauté for 5-7 minutes, stirring frequently.

  2. Add ground turkey and break up the meat, cook until no longer pink. Next, add chili powder, cumin, onion powder, garlic powder oregano, and salt. Stir for a minute.

  3. Next, add tomatoes and beans. Bring to a boil. Then, reduce heat and simmer for 30 minutes. Taste and adjust seasoning and salt as needed.

  4. Garnish with your favorite toppings: low-fat Mexican cheese or Greek yogurt, low-fat sour cream, sliced avocado, fresh cilantro, brown rice, or tortilla chips.

 

Notes

  • More spice: add 1/4 teaspoon of cayenne pepper or sliced jalapenos

  • Vegetarian or vegan: omit turkey and add extra beans or tofu crumbles

  • Slow cooker method: brown turkey and onions before adding to slow cooker. Add all ingredients and cook on high for 3-4 hours or low for 6-7 hours.
