Turkey Burgers

Ingredients

  • 1 lb. 93% lean ground turkey

  • 1 sweet potato, cooked and mashed (about 1/2 cup)

  • 1 cup packed fresh spinach, finely chopped or frozen spinach*

  • 1/4 reduced-fat feta cheese crumbles or grated parmesan cheese (optional)

  • 1/4 tsp kosher salt

  • 1/4 tsp ground black pepper

  • 1/2 tsp garlic powder

  • 1 tsp onion powder

  • 1/4 tsp smoked paprika (if you don’t like smoked, use regular paprika)


Directions

  1. Precook the sweet potato until tender. Microwave for 4 minutes or bake it for 30 minutes in a 350-degree oven. Remove the peel, and gently mash the sweet potato.

  2. Combine the ground turkey, sweet potato, spinach, and seasonings in a large bowl, and form four patties.

  3. Cook on the grill, pan, or griddle over medium-high heat, for about 7 minutes on each side, or until the burgers are cooked through and reach an internal temperature of 165 degrees F.

  4. Serve on a whole grain bun or lettuce wrap and top with your favorite toppings. Topping suggestions: sliced tomatoes, cucumbers, red onions, avocado, lettuce

 
Notes
  • Spinach keeps the burgers moist. If using frozen, defrost and squeeze out excess liquid.
