Ingredients
1 lb. 93% lean ground turkey
1 sweet potato, cooked and mashed (about 1/2 cup)
1 cup packed fresh spinach, finely chopped or frozen spinach*
1/4 reduced-fat feta cheese crumbles or grated parmesan cheese (optional)
1/4 tsp kosher salt
1/4 tsp ground black pepper
1/2 tsp garlic powder
1 tsp onion powder
1/4 tsp smoked paprika (if you don’t like smoked, use regular paprika)
Directions
Precook the sweet potato until tender. Microwave for 4 minutes or bake it for 30 minutes in a 350-degree oven. Remove the peel, and gently mash the sweet potato.
Combine the ground turkey, sweet potato, spinach, and seasonings in a large bowl, and form four patties.
Cook on the grill, pan, or griddle over medium-high heat, for about 7 minutes on each side, or until the burgers are cooked through and reach an internal temperature of 165 degrees F.
Serve on a whole grain bun or lettuce wrap and top with your favorite toppings. Topping suggestions: sliced tomatoes, cucumbers, red onions, avocado, lettuce
Notes
Spinach keeps the burgers moist. If using frozen, defrost and squeeze out excess liquid.
