Sweet Potato Salad


Servings: 3

Prep time: 5 min Cooking time: 20 min


Ingredients

  • 1 large sweet potato, diced

  • 2 Tbsp olive oil

  • 15 oz can chickpeas, drained and rinsed

  • 3 whole scallions, finely sliced

  • 3 cups lacinato kale

  • 3 Tbsp apple cider vinegar

  • 1 tsp paprika

  • 1/4 tsp salt

  • 1 tsp cumin

  • 1/2 tsp cinnamon

  • Small pinch cayenne pepper

  • 1/4 tsp black pepper


Directions

1. Heat pan over medium heat and add oil. Cook diced sweet potatoes until lightly browned on all sides and cooked through (about 15 mins). If at any point the potatoes begin to stick to the pan, add a splash of water to unstick them.


2. Add scallions, chickpeas, kale, apple cider vinegar, and spices.


3. Cook until kale is tender (3-5 mins). Enjoy!
