Spicy Corn Dip

Ingredients

  • 1 cup non-fat Greek yogurt

  • 1/2 cup cheddar jack cheese, shredded

  • 1 cup fresh or frozen corn, thawed

  • 1 (4oz) can diced green chiles

  • 2 scallions, tops only, thinly sliced

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon cayenne


Directions

  1. In a bowl, mix all the ingredients until completely combined.

  2. Cover and refrigerate for a few hours to allow flavors to meld.

 
Notes:
  • Keep for up to 3 days in the fridge. Do not freeze.

  • Serve with fresh veggies, whole grain pita bread, crackers, or chips.

  • Add half of a cooked poblano or jalapeño pepper to increase heat.
