Ingredients
1 Tbsp avocado oil
1 onion, diced
1 green pepper, diced
1 28 oz can crushed tomatoes, low sodium
2 cloves garlic, minced
1 cup okra, diced
1 Tbsp molasses
2 cups canned black eyed peas, low sodium
1 can whole kernel corn
1 can collard greens (we recommend Glory Foods Simply Seasoned)
Directions
Heat a large pot on the stove over medium heat.
Add the oil to the pot. Add the onion, green pepper, and garlic. Saute until softened.
Add the tomatoes and simmer for 1 minute.
Add the rest of the ingredients and continue to simmer over medium heat for about 15 minutes.
Notes:
If you'd like to add meat, stir in shredded turkey in step 4.
For more flavor, add a few shakes of Tabasco sauce before serving.
If you like a soupier consistency, add 1 carton low sodium chicken or vegetable broth in step 4.
