Soul Stew

Servings: 6 Prep time: 5 min Cooking time: 20 min


Ingredients

  • 1 Tbsp avocado oil

  • 1 onion, diced

  • 1 green pepper, diced

  • 1 28 oz can crushed tomatoes, low sodium

  • 2 cloves garlic, minced

  • 1 cup okra, diced

  • 1 Tbsp molasses

  • 2 cups canned black eyed peas, low sodium

  • 1 can whole kernel corn

  • 1 can collard greens (we recommend Glory Foods Simply Seasoned)


Directions

  1. Heat a large pot on the stove over medium heat.

  2. Add the oil to the pot. Add the onion, green pepper, and garlic. Saute until softened.

  3. Add the tomatoes and simmer for 1 minute.

  4. Add the rest of the ingredients and continue to simmer over medium heat for about 15 minutes.

 
Notes:
  • If you'd like to add meat, stir in shredded turkey in step 4.

  • For more flavor, add a few shakes of Tabasco sauce before serving.

  • If you like a soupier consistency, add 1 carton low sodium chicken or vegetable broth in step 4.
