Roasted Veggie & Feta Sandwich




Servings: 2 Total time: 15 mins


Ingredients

  • 2 Zucchini (medium, thinly sliced lengthwise)

  • 1/16 oz Avocado Oil Spray

  • 1/4 cup Hummus

  • 4 slices Whole Grain Bread (sliced)

  • 4 slices Roasted Red Peppers

  • 1/4 cup Feta Cheese, Reduced Fat


Directions

  1. Preheat the oven to 425°F. Arrange sliced zucchini on a sheet pan lined with parchment paper in a single layer.

  2. Spray zucchini lightly with oil and bake for 15 to 20 minutes or until golden brown around the edges.

  3. Spread 1 Tbsp hummus on each slice of bread. Top with zucchini, roasted red peppers, and feta cheese. Close the sandwich and enjoy!

 
Notes:
  • Leftovers: Refrigerate in an airtight container for up to three days.

  • Serving Size: One serving is equal to one sandwich.

  • More Flavor: Add red onion and arugula.

  • Gluten-Free: Use gluten-free bread.

  • Dairy-Free: Omit the feta cheese or use plant-based cheese instead.
