Ingredients
2 Zucchini (medium, thinly sliced lengthwise)
1/16 oz Avocado Oil Spray
1/4 cup Hummus
4 slices Whole Grain Bread (sliced)
4 slices Roasted Red Peppers
1/4 cup Feta Cheese, Reduced Fat
Directions
Preheat the oven to 425°F. Arrange sliced zucchini on a sheet pan lined with parchment paper in a single layer.
Spray zucchini lightly with oil and bake for 15 to 20 minutes or until golden brown around the edges.
Spread 1 Tbsp hummus on each slice of bread. Top with zucchini, roasted red peppers, and feta cheese. Close the sandwich and enjoy!
Notes:
Leftovers: Refrigerate in an airtight container for up to three days.
