Ingredients
1 cup gluten-free rolled oats
1/4 cup flaxseed meal
2 tsp pumpkin pie spice
1/4 cup almond butter
1/4 cup unsweetened pumpkin purée
3 Tbsp maple syrup
1 tsp vanilla extract
2 Tbsp mini semi-sweet chocolate chips or dried cranberries
Optional: add a scoop of your favorite protein powder
Directions
1. In a bowl, add all of the wet ingredients and stir together. Add in the oats, flax, pumpkin pie spice, and chocolate chips or cranberries. Add protein powder, if using. Stir until well combined.
2. Roll the mixture into approximately 15 1-inch sized balls.
3. Store the energy bites in a single layer in a lined airtight container. Keep them in the fridge for several days or the freezer for several months. Enjoy.
