Pomegranate & Beet Side Salad



Servings: 3 Time: 15 min


Ingredients

  • 1/4 cup Extra Virgin Olive Oil

  • 1/4 cup Lemon Juice

  • 1/2 tsp Oregano

  • 3 cups Mixed Greens

  • 2 Beets (pre-cooked (brand rec: Love Beets))

  • 2 Clementines (peeled, sectioned)

  • 1/4 cup Pomegranate Seeds

  • 1/4 cup Feta Cheese, Reduced Fat


Directions

  1. To make the dressing, combine the oil, lemon juice, and oregano in a jar and shake vigorously until combined.

  2. Divide the mixed greens evenly between plates. Top with the sliced beets, clementines, pomegranate seeds and cheese. Add the dressing and enjoy!

 
Notes:
  • Leftovers: Refrigerate in an airtight container for up to three days.

  • Dairy-Free: Use nutritional yeast instead of feta cheese, or simply omit the cheese.

  • Additional Toppings: Add nuts and seeds.
