Pasta with Spinach Basil Pesto

Ingredients

  • 1 cup whole grain, brown rice or legume pasta

  • 2 cups fresh spinach, packed

  • 1 cup fresh basil, packed

  • 1/3 cup low-sodium chicken broth or pasta water

  • 2 garlic cloves

  • 1 tsp grated lemon zest

  • 1/4 tsp kosher salt

  • 1/8 tsp ground pepper

  • 2 tablespoons parmesan cheese

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons walnuts*

Directions

  1. Combine stock and garlic in a pot and bring to a boil. Then, simmer for 5 minutes. Allow to cool.

  2. Meanwhile, cook pasta of your choice.

  3. Add basil and spinach to a food processor or blender, and roughly chop.

  4. Add seasonings, lemon zest, parmesan, olive oil, walnuts, and cooled garlic and broth. Blend in a food processor or blender until smooth.

  5. Top pasta with pesto and serve.

 
Notes
  • Toast walnuts for more flavor.

  • No spinach. Add asparagus or mushrooms.

  • For added protein, top with shrimp, ground turkey, or chicken breast.
