Ingredients
1 large slice of whole grain bread (or 2 thin slices)
2 Tbsp hummus
1/2 avocado, sliced
1/4 cup spinach, chopped
1 Tbsp cucumber, thinly sliced
1 large tomato slice
1 spring onion, sliced
1 Tbsp carrots, thinly sliced
2 small green olives, slice
Directions
1. Pop bread in the toaster until golden brown.
2. Spread hummus on toast.
3. Top with avocado, spinach, cucumber, tomato, onions, carrots, and olives.
