Ingredients
1 block extra firm tofu
1 tsp dried parsley
1 tsp dried thyme
2 Tbsp avocado oil
4 cloves garlic, minced
3/4 tsp black pepper
1/4 cup lemon juice
1 Tbsp dijon mustard
1/2 tsp salt
Directions
Prep Ahead:
1. Open and drain the water from the block of tofu.
2. Press the tofu: Wrap the tofu block in a paper towel, and then a dish towel. Place a cutting board on top of the wrapped tofu and then add some heavy objects on top to add weight. Press the tofu for at least 30 minutes before using.
3. While the tofu presses, make your sauce by whisking together all remaining ingredients in a bowl.
4. Once the tofu is pressed, cut it into even cubes about 0.5-1 inch thick and wide.
Cover the tofu in sauce and toss to combine.
5. Marinate for at least 30 minutes or up to 24 hours (longer = more flavor).
Baked Cooking Method:
1. Preheat oven to 400 F. Meanwhile, assemble tofu cubes in a single layer on a parchment-lined baking dish. Reserve leftover marinade.
2. Bake for 10 minutes, then flip. Continue baking another 5-10 minutes, until tofu is golden brown. Remove from oven and divide into 3 portions.
Air-Fried Cooking Method:
1. Arrange the tofu cubes in a single layer in the air fryer basket, making sure to leave a little space around each one for ultimate crispiness.
2. Air fry at 400F for 5 minutes, then flip. Continue frying for another 5-6 minutes, until tofu is golden brown and crisp around the edges. Exact time may depend on your fryer.
