Green Beans with Shallots and Lemon



Servings: 3 Cooking time: 15 min


Ingredients

  • 3 cups Green Beans (trimmed)

  • 1 tbsp Olive Oil

  • 2 Shallot

  • 2 tsps Honey

  • 1 Lemon (Zested)

  • 1/8 tsp Salt

  • Black Pepper (To taste)


Directions

  1. Bring a medium-sized pot of water to a boil on the stove.

  2. Add the green beans and cook in the boiling water for 3-4 minutes. While the beans are cooking, fill a large bowl with ice water.

  3. Drain the beans with a colander and immediately transfer to the ice water to stop the cooking process. Drain again and set aside.

  4. Heat the oil in a large pan over medium-high heat. Add the diced shallots and saute for 1-2 minutes.

  5. Add the green beans, honey, and lemon zest to the pan and stir together for a couple of minutes, until warmed through. Season with salt and pepper and serve immediately.

 
Notes:
  • Leftover: Refrigerate in an airtight container for up to three days.
