Ingredients
1 lb. mahi (cod, halibut, or snapper work well too)
1 lb. asparagus*, trimmed and cut into 2-inch pieces
2 medium zucchinis*, cut in rounds
1/2 medium red onion, thinly sliced
1/2 cup cherry tomatoes, halved
2 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 tsp kosher salt
1/4 tsp ground pepper
1 lemon, cut into 8 slices
Directions
Preheat oven to 400F degrees.
Cut fish into four equal pieces. Set aside.
In a small glass bowl, whisk the olive oil, garlic, oregano, salt, and pepper. Add veggies and toss lightly. Set aside.
Cut 8 pieces of heavy aluminum for the fish and vegetable packets.
Place one piece of foil in a 9" x 13" rectangular pan. On the first layer, add the fish. On top of the fish, place 1/4 of the veggie mix. Top the veggies with 2 slices of lemon.
Seal each fish and vegetable packet with a second piece of foil. Fold both the bottom and top foil pieces together tightly. Place the fish packets on a sheet pan and bake for 15-20 minutes or grill.
Carefully open packets, as they will release hot steam.
Remove the top foil and serve as is or over a whole grain or with a sweet potato.
