DIY Black Bean Tacos

Ingredients

Black Beans

  • 3 cups black beans, drained and rinsed

  • 1/2 tsp salt

  • 1 tsp cumin

  • 2 Tbsp lime juice

Per Serving

  • 3/4 cup seasoned black beans

  • 1/4 small onion, diced

  • 1/4 tomato, chopped

  • 1 Tbsp cilantro, chopped

  • 1/4 cup arugula

  • 1/4 avocado

  • 2 corn tortillas


Directions

1. Add black beans to a bowl. Toss with salt, cumin, and lime juice.


2. Assemble 2 tortillas with seasoned beans, veggies, and avocado.

 

Notes:

  • Feel free to switch up the ingredients in this recipe with some of your favorite veggies, legumes, herbs, or spices.

  • If you want to enhance the flavor of the black beans, add ingredients to a pot and simmer for 15 minutes.
