Ingredients
Black Beans
3 cups black beans, drained and rinsed
1/2 tsp salt
1 tsp cumin
2 Tbsp lime juice
Per Serving
3/4 cup seasoned black beans
1/4 small onion, diced
1/4 tomato, chopped
1 Tbsp cilantro, chopped
1/4 cup arugula
1/4 avocado
2 corn tortillas
Directions
1. Add black beans to a bowl. Toss with salt, cumin, and lime juice.
2. Assemble 2 tortillas with seasoned beans, veggies, and avocado.
Notes:
Feel free to switch up the ingredients in this recipe with some of your favorite veggies, legumes, herbs, or spices.
If you want to enhance the flavor of the black beans, add ingredients to a pot and simmer for 15 minutes.
