Ingredients
1 medium zucchini
1 tablespoon olive oil or avocado oil
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon smoked paprika
Directions
Preheat the oven to 425 degrees. Line two baking sheets with parchment paper.
In a large bowl, combine olive oil, salt, pepper, onion and garlic powders, and smoked paprika. Stir to combine.
Thinly slice zucchini with a sharp knife or mandolin, about 1/8-inch-thick slices.
Add the zucchini slices to the bowl and toss well to ensure each slice is seasoned well.
Place the zucchini slices on the prepared baking sheets.
Bake for about 10 minutes. When the zucchini starts to show brown spots, remove from oven and set aside.
Reduce the oven to 180 degrees. Return zucchini to oven and cook for an additional 30 minutes or until the slices are crispy.
Remove from the oven and cool. Enjoy!
Notes
Add Heat: Add a dash of cayenne pepper or red pepper flakes.
Add Flavor: Add 1-2 tsp of parmesan cheese or try different seasonings, like oregano or paprika.
Storage: Best enjoyed immediately.
