Ingredients
2 cups quinoa, cooked
2 large eggs
1 cup shredded sharp cheddar cheese reduced fat
1 cup finely chopped broccoli, cooked
1/2 tsp ground mustard
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
Directions
Preheat oven to 350 degrees.
Mix all ingredients together in a large bowl.
Spray a mini muffin pan with non-stick spray and spoon one big tablespoon of the mixture into each cup, pressing down mixture into each cup.
Bake for 15-20 minutes until the bites are firm and slightly browned on top. Enjoy!
Notes
Leftovers: Keeps well for 5 days refrigerated.
Serving Size: 5 mini bites per serving.
More Flavor: Try different seasonings or add plant-based sausage.
No Egg: Sub eggs for 2 Tbsps flaxseed meal + 6 Tbsps water. Stir and let set for 5 minutes before incorporating.
