Broccoli Cheddar Quinoa Bites



Servings: 6 Total time: 15 min


Ingredients

  • 2 cups quinoa, cooked

  • 2 large eggs

  • 1 cup shredded sharp cheddar cheese reduced fat

  • 1 cup finely chopped broccoli, cooked

  • 1/2 tsp ground mustard

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

Directions

  1. Preheat oven to 350 degrees.

  2. Mix all ingredients together in a large bowl.

  3. Spray a mini muffin pan with non-stick spray and spoon one big tablespoon of the mixture into each cup, pressing down mixture into each cup.

  4. Bake for 15-20 minutes until the bites are firm and slightly browned on top. Enjoy!

 
Notes

Leftovers: Keeps well for 5 days refrigerated.

Serving Size: 5 mini bites per serving.

More Flavor: Try different seasonings or add plant-based sausage.

No Egg: Sub eggs for 2 Tbsps flaxseed meal + 6 Tbsps water. Stir and let set for 5 minutes before incorporating.
