Ingredients
2 1/2 cups oats, blended until smooth
2 bananas
1/3 tsp baking soda
1 1/2 tsp vanilla extract
1/4 tsp salt
2 cups unsweetened plant milk
2 Tbsp ground flaxseeds
2 1/2 Tbsp chopped walnuts
1 tsp avocado oil
1 Tbsp maple syrup (optional)
Peanut butter, to serve
Directions
1. Add oats, bananas, baking soda, vanilla, salt, milk, and flaxseeds into a blender. Blend until smooth and transfer to a bowl.
2. Begin heating a pan over medium heat. Mix chopped walnuts into the pancake batter.
3. Lightly grease pan with avocado oil, using a spatula to thoroughly coat pan.
4. Use a 1/4 cup measurement scoop to spoon pancakes onto pan. The batter should make about 8-9 pancakes.
5. Cook until bubbles begin to form (about 5 minutes) and golden on the bottom, then flip. Cook on the other side until golden brown.
6. Remove from heat and serve 2-3 pancakes with 1 Tbsp peanut butter, 1 tsp maple syrup (optional) or more sliced bananas.
Notes
These pancakes will take longer to cook than traditional pancakes and the timing will vary by the stovetop.
