Baked Cottage Cheese Eggs

Ingredients
1 cup cottage cheese, 2% or less
4 large eggs
1/2 cup shredded mozzarella cheese, low-fat
1/4 cup finely chopped bell peppers or mushrooms
2 tbsp chives
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon kosher or sea salt
1/4 teaspoon ground black pepper
Directions
Preheat oven to 375°F.
Lightly grease a baking dish (8×8 inches or muffin tin) with cooking spray or a little olive oil or avocado oil.
In a large bowl, combine the cottage cheese, eggs, shredded cheese, veggies, and seasonings.
Pour the mixture into the prepared baking dish or muffin tin.
Bake for about 25-30 minutes, until the eggs are set and the top is slightly golden.
Remove from the oven and let cool for a few minutes. Cut into squares and serve warm. Enjoy!
Notes:
Vegetables: Try different veggies like spinach, kale, zucchini, or cherry tomatoes.
Enhance the flavor: Add spices like paprika or cayenne pepper.
Cheese: Substitute other cheeses, such as cheddar, feta, or swiss.
Storage: Place leftovers in an airtight container and store in the fridge for up to 3 days.
