Ingredients
1 cup black beans, canned, low-sodium
1 cup Minute brown rice
1 cup romaine lettuce, chopped
1/2 avocado, diced
2 Tbsp taco sauce (such as Herdez Taqueria Street Sauce)
3 Tbsp pico de gallo
Directions
Open the can of black beans into a colander. Drain the excess liquid and rinse the beans. Measure out 1 cup of beans into a medium mixing bowl.
Microwave the rice according to the packet instructions, then add it to the bowl. Mix to combine.
Chop and dice the lettuce and avocado then add to the bowl.
Top the mixture with 2 Tbsp taco sauce and enjoy.
Notes:
Store leftover beans and avocado in the fridge to use in another meal.
Microwaveable rice can be substituted with frozen corn.
