Ingredients
Apple Pie Topping
1 apple, chopped
1 tsp avocado oil
1 Tbsp maple syrup
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger powder
pinch of salt
Oatmeal
2 cups rolled oats
1.5 tsp vanilla extract
1 Tbsp chia seeds
3 cups almond milk, unsweetened
1 Tbsp almond butter
Directions
1. Prepare apple topping: Mix apple, maple syrup, and spices in a saucepan. Place saucepan on the stove over medium heat and simmer about 5 minutes, until apples are softened. Add a small splash of water if they stick to the pan.
2. While apples are cooking, prepare your overnight oats. Mix oats, vanilla, chia seeds, almond milk, and almond butter in a bowl. Mix very well until evenly combined.
3. Divide oatmeal into 3 containers. Evenly top with the apples. Leave in the fridge until ready to serve. Enjoy cold or warm in the microwave for 1 minute.
