Ingredients
Vinaigrette: 3 servings
3 1/2 Tbsp extra virgin olive oil
2 Tbsp lemon juice
1 tsp dijon mustard
1 tsp maple syrup
1 clove garlic, minced
Pinch of salt
1/8 tsp black pepper
Salad: 3 servings
6 cups arugula
1 1/2 cups cannellini beans, drained and rinsed
1 apple, diced
1/3 cup white onion, thinly sliced
3 Tbsp pistachios
Directions
1. Prepare Vinaigrette: Add all ingredients to a jar and shake to combine. Store on the countertop until ready to serve.
2. Prepare salad ingredients.
3. Serve salad with 2 Tbsp lemon vinaigrette.
